It was a great time to cook my favorite foodie not to mention that Chicken Adobo is one of my favorite foods especially when it is a native chicken. I may not be the best at cooking but one thing is for sure, I love to experiment with several dishes at home with the spices and veggies from my mini garden as I mentioned in my previous post.
As a common slang term in my country says, “Mekus mekus na yan, pinkchic!”. This implies cooking foodie in my way and style with a twist!
Yesterday I went home early since I have already accomplished many things at my workplace. I was in the mood for cooking so I was the one who prepared a dish in the kitchen for dinner. And then I remember my friend had given me a Rosemary when I was at Taghuyan so I also used it in the marinade.
Although the native chicken was not available in the refrigerator, I just bought a kilo of chicken breast and chicken legs at the market and most of the spices I used were also available in my mini garden.
Some of the spices that I got from my mini garden at home to cook the chicken Adobo were Onion Chives, Onion, Sweet pepper, and wild chili. So I have saved once more from buying high prices of spices at the market.
Ah! Chicken Adobo is so popular dish here in the Philippines. It is easy to cook and it is so delicious too as it is marinated in a mixture of many ingredients such as vinegar, soy sauce, salt, garlic, and many other spices that would complement its taste and then simmer until cooked. How I loved it when it became tended and served with rice for its slightly tangy and delicious taste.
Here are some of the ingredients and cooking procedures on how I cooked my Chicken Adobo With A Twist:
The Ingredients
1/2 kilogram Chicken Breast
1/2 kilogram Chicken Drumstick
1/4 cup vinegar
1/2 cup soy sauce
2 sliced onions
8 cloves of minced garlic
1 pinch of salt
1 piece of sweet pepper
4 pieces of small wild chilis
1 set of onion chives
1 teaspoon of rosemary bits
1 piece cucumber
The Cooking Procedures
I used chicken breast and drumsticks in my chicken. Then I mixed them with several ingredients such as vinegar, soy sauce, garlic, onion chives, sweet pepper, wild chili, bits of rosemary, and then cucumber which made it a Chicken Adobo With A Twist of how I prepared dish.
The traditional way is to sautee all the ingredients in a pan over medium heat but I had my process of letting all the ingredients be marinated for a while so that it will be savory and aromatic.
I just mixed all the ingredients and marinated it for 30 minutes before cooking. After the waited time, I placed the marinade in a pan over low heat. I then covered the pan and cooked it in a stove.
I covered the pan for 15 minutes so that the marinade would produce its water and the chicken would have its oil even without sauteeing it just like the traditional way of cooking adobo the pan must be heated with oil first and sautee all the spices.
I did not add any cups of water. At this time, while the pan was covered, little by little the chicken was producing its water and oil, making the dish delicious and tender too.
After 15 minutes, I added the soy sauce and vinegar. I stirred it and let it simmer for a few minutes.
Even if I did not sautee at the beginning, the dish now has produced its oil from the chicken and its water through simmering at a low heat.
I then covered and simmered it once more after adding all the ingredients and simmered it for about another 15 to 20 minutes and then added the seasoning continuously under low heat.
I covered it for another 5 minutes making sure that the chicken meat would be tender and savory. From time to time, I am checking its appearance and taste it. Until I saw that the chicken had a brown appearance with my taste preference. This gave me the idea that the chicken was now ready to eat.
When the dish was cooked, I added bits of onion chives as its toppings and cucumber as sidings. And then I served it at the table for our dinner. I love to eat this when still hot with either red or white rice.

I had a great dinner and I ate a lot. Perhaps it always feels so good to have a homemade dish. The Chicken Adobo With A Twist was indeed tasty, spicy, and savory.
