Happy Monday everyone! The rain has come back for a cold and dreary day, but at least all I have to do is look around @lenasveganliving's #fruitsandveggiesmonday contest for some vibrant food to brighten up the day! All the foodie ladies and gents on here have been showing up with their best for all of the challenges lately, and I'm sure today will be no different. 🤩
I'm still not quite feeling my best today, but I have something for the communal Monday table regardless. Though you all may be happy it is a virtual potluck lest my cooties are catching. My dish today actual puts to use one of our fabulous hostess's recipes. I had eye-balled Lena's Crispy Cauliflower Wings a while back after seeing her post the recipe. Luckily I remembered wanting to try it out after purchasing a huge cauliflower from the market on Saturday. I couldn't wait to put together the whole meal to finally try it out!
I also happened upon some new peppers from one of the vendors at the market. He had posted a little bit about them on his Instagram feed, so I was excited to be introduced to the Ají Limo in person. This colorful chili is from Peru and has a citrus note to it in addition to a good kick. Since I had never worked with them before I opted to throw one into a kohlrabi and bell pepper relish to top my tacos to see how spicy it came out. @dksart likes a solid punch of heat, but I prefer it a bit more subtle. I'm happy to report one was just the right heat for me! I am excited to see how else I can use these little guys since I definitely have plenty to use up.
The relish was just:
- 2 red bell peppers, seeded & finely chopped
- 1 kohlrabi bulb, peeled & finely chopped
- 1 Ají Limo, seeded & minced
- 1 lime, juice & zest
I used the food processor to do the heavy chopping and just mixed everything together for a fresh and lightly spicy topper for my final dish.
I've seen lots of the ladies around here whipping up their own wraps and tortillas, so I decided to give some homemade lentil tortillas a shot. I soaked a cup of red lentils overnight, then blended them up with some water and a pinch each of ground cumin and coriander. From there you just pour the batter in into a pan and cook for a few minutes on each side. So they ended up a little more like pancakes than tortillas, but @dksart and I didn't mind because the flavor was great. They also held together a whole lot better than most store-bought options which is a huge win (right @puravidaville?).
I made a few tiny adjustments to Lena's cauliflower recipe based on what I had on hand. Instead of the rice flour I used chickpea flour and water for the batter. I'm happy to report it worked perfectly. I also added some salsa & pico seasoning to the bread crumbs to go along with my theme. They were perfect in the tacos! Crispy on the outside, but soft and totally cooked through.
I think we'll have some extra to munch on since I had such a big head of cauliflower to work with. It's always fun to get a chance to finally try out some of my favorite folks' recipes. The finishing touch was an easy homemade guacamole with mashed avocado and lime juice. Done and done!
We've got some more for dinner tonight to enjoy all over again. Using the smaller pan I was able to get 12 "tortillas" out of the batter, which was perfect to get 3 veggie-packed tacos for each of us yesterday and today. Maybe after that I'll use the extra cauliflower and relish in a yummy salad. That's if I don't gobble up all the other crispy little morsels of cauliflower before then...

I thought those tortillas looked homemade. Bravo my friend, you totally killed it. Your tortillas look better than any store bought shtortillas I’ve ever worked with. Just lentils and water huh? Frikken genius! Who doesn’t love taco night? Especially when everything is made with real ingredients and from scratch… love it! Great job friend :)

Definitely some kitchen magic for sure! I'm glad I finally tried making them myself. It took a little while to cook them all up, but totally worth it to have a fresh tortilla-cake to wrap around that yummy filling! I will definitely be experimenting more with similar ingredients to see what I can whip up! They broke a little bit when eating the leftovers today, but it probably would have been just as easy to save the batter and cook them up fresh today to not have that issue. I still didn't need a fork, so I count it as a win!

this recipe made me want to try the cauliflower recipe too @planstoplanks .. I didn't know why My FIL keep buying cauliflowers though he knews I only use it for soup..LOL. do you think a toothless old man could eats this cauliflowers?
Haha, well I suppose it's good he likes his veggies! These turned out pretty crispy, but if you maybe cook them at a lower temperature for longer then they might turn out a little softer on the outside for him. Or perhaps Lena has another idea since it is her recipe? I enjoyed the crispness but it might be hard if you don't have any teeth!
I love crispy veggies too... I have tried to make fried spinach before, but he refuses to eat because its too crunchy for him, but.. how do I know before I try it? I have a small size cauliflower.. I should try this, maybe I'd better steam it before. I should check on lena's recipe then, Thank You!

These were my first shot at the wings, too! So glad Lena has such an awesome recipe to pull from. I'll definitely be making them again. Now I've got to figure out what to do with the rest of my chili peppers. :)
Now Lena's recipe is also on my to try -list, I just wish we had a couple of extra hours every day to try all these great recipes! At the moment I have no ideas for you regarding the chili peppers, but I'm sure anything you'll create will be delicious! :)

I didn't include a pic of it, but the cauliflower I got was literally the size of my head!! I even had a few cups of florets left that I didn't use for these! You should know by now I can't seem to do anything in small quantities, haha. Which is ok because these were delicious! So glad I finally pulled out that recipe of yours to try! :)

Isn't cauliflower so great? There are so many ways to prepare it. This was the first time I battered it before roasting it, so it was a nice change for something just a little bit different. :)

Those look great. How long does this take to make?
The relish and guac take no time at all, but the cauliflower and lentil tortillas do take a little bit to get together. I used a huge cauliflower, so it probably took about 15-20 minutes just to get it all battered and coated. Then 40 minutes in the oven. Since I cooked the tortillas one at a time they took about 45 minutes to get them all done, but I did those while the cauliflower was cooking in the oven. I'd say the whole meal probably took about an hour and 15 minutes to get it all together. Definitely a little time intensive, but not bad for a really tasty Sunday dinner. :)

Those red lentil taco pancakes look delicious! I love that idea @plantstoplanks. I've never tried flatbread type recipes with legumes before (except chickpea flour) but I'm going to make these. Lovely colourful photos of a delicious meal. Going to try Lena's cauliflower wings too. Not sure the husband will be that adventurous but that means more for me!
The best of both worlds--tacos and pancakes all in one meal, haha! I should have billed it like that in my title. ;) I think I've seen @celestialcow and a few others try something similar before, so I'm glad to have had inspiration to try it myself. Don't know why I waited so long because it is super easy and delicious. You should definitely give Lena's recipe a try, as well. The cauliflower makes a great bite on its own.
That's so funny! Pancakes are usually sweet here in SA (and what you would call a crepe) I wonder if this recipe could do a sweet and savoury? Have you tried the cauliflower pizza before? I haven't but I know it's easy. Using cauliflower to make the base.....
I think the red lentils are mild enough that they could easily go sweet or savory. :) I have not made a cauliflower crust pizza yet myself, but I have had some from a local raw vegan food vendor at the market. Hers is delicious, so I need to find out her secret!

I love that the recipe is vegan AND simple. All I'd need is some cauliflower and I could probably make something quite close with the ingredients I have on hand.

I think I may have blended my lentil batter too long because it was quite frothy. Perhaps I whipped a little too much air in the batter. I'll have to experiment a little and report back if I get a different result next time. They were still delicious, so we didn't mind. At least I may have gotten better at making pancakes, haha!
