Cooking El Salvadorian Pescado Forrado also known as Pescado Seco (Dry Fish). This fish is very, very salty, so the first thing we did was soak the fish in a water overnight, so that the fish is not as salty.
Next, we need to prepare a tomato salsa with about 4-5 tomatoes, some garlic, onions, green pepper, basil, salt and spices to your liking.
Next, we beat 5 egg whites and then add the egg yolks and beat it till it's pretty thick.
We touch the fish with some flour and then dip it in the egg and fry it.
We cook the fish in some water and with some cut potatoes. Later we add the salsa into the cooking fish and cook it some more.
You serve the fish with some rice. Buen provecho.
