I thought that maggots actually assisted in eating away rotten flesh? I'm not saying this is a good thing but does it always result in the animal dying? It seems like there are a lot of populations of animals that if this was the case, would have gone extinct a long time ago even before humans were around.

There is some truth to this but only if the maggots are carefully watched. From what I have read there is some application of maggots used in humans for eating away infection but there are medical methods of doing this that are far less dangerous. You see, Maggots prefer weakened flesh because it is easier, but that doesn't mean they just stop once all of that is gone and then bugger off to somewhere else leaving only healthy stuff behind. They will completely consume an animal and create new bad flesh to continue eating.
