It's been a few weeks since I posted because of a busy work schedule but it doesn't mean I hadn't eaten. I wanted to start sharing again with today's magnificent lunch. At work we prepared Asparagus Risotto.
Looks can be deceiving. This is not simply some minute rice. All the ingredients were brought from Italy except the asparagus. The risotto was cooked in a beef stock which was later mixed with seared asparagus. The parmesan cheese was aged 2 years and arrived last week. It was perfection!
