Last Sunday was all about creativity in my kitchen! Instead of preparing the usual dishes, I decided to experiment and whip up something special for my kids. Since they absolutely love potatoes, I paired them with the goodness of spinach to create a unique and flavorful Potato and Spinach Curry. It turned out to be a hit with everyone at home, and I’m excited to share this recipe with you.

Sundays are perfect for trying something new and adding a personal touch to our meals. This time, I wanted to make a dish that not only satisfied our taste buds but also brought a healthy twist to our dinner. The result was a delicious and vibrant curry that’s now a family favorite!
Ingredients
For Marinating Potatoes:
4 boiled potatoes (cut into pieces)
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
Salt to taste
For the Masala:
2 onion (chopped)
2 tomatoes (chopped)
3 green chilies
4-5 garlic cloves
1-inch ginger piece
5-6 almonds
1 bunch of fresh spinach
1 handful of fresh coriander leaves
2-3 tbsp oil
Salt and spices as per taste
Step-by-Step Recipe
Marinate the Potatoes
In a bowl, mix the boiled potatoes with turmeric powder, red chili powder, garam masala, and salt. Let the potatoes marinate for about 10 minutes to absorb the spices.
Prepare the Masala
Heat a pan and add some oil.
Add onions, tomatoes, green chilies, garlic, ginger, and almonds. Sauté them until soft and aromatic.
Add the chopped spinach and coriander leaves. Cook until the spinach wilts and all ingredients are well combined.
Let the mixture cool down, then blend it into a smooth paste.
Fry the Potatoes
In the same pan, heat some oil and shallow-fry the marinated potatoes until they turn golden brown.
Combine and Cook
Add the prepared spinach masala to the pan with the fried potatoes.
Stir well and let it cook on low flame for 5-7 minutes to allow the flavors to combine.
Adjust salt and spices as per your taste.
Ready to Serve
Your delicious and creative Potato and Spinach Curry is ready! Serve it hot with chapati, paratha, or steamed rice, and watch your family enjoy this wholesome dish.
