Weekend Bonding With Benita (Making Nigerian Jellofrice)

So today my daughter was like mummy ,I want to eat rice. I told her that I would only prepare it if she helps me prepare it . She said: "Mum what mum, I am just six years old and you want me to cook ".

After much talking I convinced her to help me out. So today I decided to prepare jellofrice, our home made Nigerian jellof rice.

We started preparing the rice, I taught my daughter how to parboil rice. I never knew that she's a fast learner not until she made this utterance: "Mummy, cooking is very very simple". I couldn't help but laugh and then I told her that we still have many processes to do .

After parboiling and washing the rice, I started preparing my sauce , my daughter insisted that she wants to cut the tomatoes, so I had to hold her and cut them , although it took a long time it was still fun.

When we entered the Onion cutting part , we cut the first one and the second she started feeling hot In eyes,she tried to endure until she couldn't hold it any longer she ran of the kitchen and started crying out to her dad: "Dad there was a monster in the onion". I laughed until I cried, I was like ah...this girl she couldn't think of anything else except for monster. After easing the pain she refused to enter the kitchen ,so I had to cook by my self. I mixed my sauce and other ingredients. It was an unexpected food so I didn't have any meat at home. I mixed my rice and sauce together and I left it to boil for some minutes. Here we have it our home made jellofrice.
