Cinnamon Scones With Homemade Jam

I've been posting recipes lately, which is kind of unusual for me as in two years there were only a few recipes shared here but there's always a first time, a start, isn't it? Today I'd like to share my cinnamon scone recipes with you.

Scones are very popular all over the world and have a bunch of varieties. I have a lot of recipes, this one is a very simple one, easy to make and delicious.

Ingredients:

  • 700 g all purpose flour,
  • 360 ml warm milk,
  • 2 tbsp unsalted butter,
  • 160 g sugar,
  • 25 g yeast
  • 2 eggs,
  • 2 tsp cinnamon,
  • 1 tsp salt.

The Process:

Take half of the warm milk, add one tbsp sugar, yeast and let it rise in a warm place. Take a big bowl, add flour, salt, cinnamon, mix well. Add the risen yeast and the beaten eggs, then the rest of the milk and make a dough. Melt the butter, gradually add to the dough, work it till you get an non-sticky dough, like on the photo below.

Cover with a plastic wrap and let it rest in a warm place till it doubles. It took me two hours.

I should give up using plastic wrap while baking and return to what our ancestors were doing once, use a clean tablecloth but the truth is, covering a dough with plastic gives you the best result. It's time to try it out and learn how to get the best result with a tablecloth.

This is the dough after two hours rest, literally doubled. The best result, without any doubt.

Slightly flour the working surface and roll out the dough, should be 1 cm thick, then cut out the scones using a cutting ring.

You won't get perfect shapes but no worries, substance over form, that's my motto.

Put a baking sheet in the baking tray, place the scones at 2 cm distance from each other and place the tray in the previously preheated oven. Bake it for 8 - 10 minutes, then let it cool for 5 minutes. Cut the scones in half and serve with jam.

Because of the cinnamon, I'd suggest a sweet jam. I used my own homemade rosehips jam that goes well with it. If you don't like cinnamon, you're free to use any spice you like or don't use any. You can serve with jam or chocolate cream, both are fine.
