What I think today is very chaotic. I can dive into my own mind when I wake up in the morning and think about what food menu today? I am really lazy to get out of bed. I really want to not move but that is impossible, I have to prepare food in the current difficult economy.
In fact, I am not thinking about the expensive price of food if I only buy online. Take away restaurants are easy but I am too afraid to count calories that I do not know. The diet journey for the past few years to balance blood sugar sometimes seems difficult, but actually life helps me, helps me a lot. Well, the risk is boredom to make food without preparing a meal plan.
Of course, I will still cook with the ingredients I have. Besides, I haven't done my weekly shopping, so I only have a stock of tempeh. Tempeh must always be there at all times, just like chicken. The cheapest and easiest source of protein to cook. I am very lucky to live in a place where the supply of tempeh is very cheap and easy to get.
The price of a tempeh weighing 250-300 grams is 4 cents. It can be made into a meal for 2-3 servings. If someone complains about getting enough daily protein because it's expensive, I can refute that.
Let's continue, I will make a traditional food recipe, Lodeh.
Why lodeh? Okay, I will explain the reason after giving you the recipe for making the perfect lodeh. First, just prepare The Ingredients:
- 1 pack of tempeh
- 2 cloves of shallots and 2 cloves of garlic
- One piece of ginger, lime leaves
- Vegetables: carrots, green beans and chilies
- 1 pack of thick coconut milk
- Salt and sugar
- 500 ml of water
How to cook:
When I cook lodeh, I don't use any oil at all, so as a source of fat, I use 65ml of coconut milk. I buy it one pack so it's practical.
Finely grind the shallots and garlic, then add 500 ml of water. Boil the water until it boils and then add the ginger and vegetables that have been cut. Adjust the size of the vegetables to your taste.
Waiting for the vegetables to be half cooked, then I cut the tempeh. While waiting, I prepare other ingredients such as salt and sugar. For the taste, just adjust it to your taste. I prefer a slightly sweet taste, a little savory from the salt.
Add the tempeh and then wait for 5 minutes before adding the thick coconut milk. Add the coconut milk at the end before it is cooked, so that the coconut milk is not heated for too long. Add salt and sugar. The food is ready to eat!
Well, one of the reasons why I like lodeh is because of one thing. This food is quite filling and also complete. There is protein from tempeh, there are carbohydrates and fiber from carrots and green beans and fat from coconut milk. This is why lodeh is always a must-have menu in our meal plan.
