Greetings friends and community. Due to powercut and lost internet My meatless Moday post I am publishing today, this is our meatless monday/vegan monday. some times it is very good to use greens for making food. Here in India plenty of winter vegetables available in market and I love to have different vegetables for everyday Today I made some spinach with potato and green peas.
Ingredients:
2 cups of spinach paste
1 cup spring onion chopped
1 cup green peas
1 potato cut in cubes
2 tsp oil
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp turmeric
1 tsp salt
1/2 tsp red chili
1 tbsp gram flour
1 tomato for garnish
This is the way I prepare my green peas.
After getting pea pods from market.I peel the pods and collect peas pack in the ziplock bags and set them in the freezer.
Making spinach paste we get big branch just for 10 cents in market
After buying that we clean wash thoroughly cook and blend it with some green chili,and ginger.
In a pan adding 1tsp coconut oil and get that hot.
Added potato cubes in and stirred for 1 minute.
Added spring onion. and stirred it for a 1minute. (Save few rings from white part to garnish) .
Added green peas.
All spices powder and salt
Stirred well.
Added 1 tbsp gram flour/Chickpea flour.Roasted it 1 minute.
Added spinach puree.
rinsed mixer jar with 1/2 cup water and added this water in the spring onion, peas, potato , spinach mixture.
Covered and cooked for 2 minutes.
garnished with spring onion rings.and tomato slices.
Served with flatbread and rice
