I've been doing the 16:8 intermittent fasting of late, but sometimes my body says 'screw that, you need breakfast NOW', and generally, that's a sign to listen. But what to eat? I get so bored of breakfast and tend to grab a handful of almonds. I'm not big on toast and I'm fed up with summer smoothies. Nothing was cutting it at all this morning - until I recalled reading something about banana oat pancakes.
Of course, I dont really read recipes - I just make it up after reading something vaguely once. It works for me. Into a blender went a frozen banana (fresh would be fine), a few handfuls of oats, a few tablespoons of coconut yoghurt, a pinch of salt, some cinnamon and some linseeds. I whizzed it up, adding a little extra water so the blades didn't stick. Too easy. Once it rests for five minutes, the oats will soak up the water anyway and it'll become quite thick.
They held together very well, and with a drizzle of maple syrup, some coconut yoghurt and fresh limes from my garden (as well as a couple of pretty little edible heartsease) they made a very satisfying breakfast indeed. No eggs, no flour, no fuss - and definitely something that will be a staple for my breakfasts in future!
I have been making a version of this ony travels with ready made oatflour and fork mashed banana. Too easy!

You asked about our favorite breakfasts and this actually is it for me hahabab except I don't do it vegan! Although I do let out the egg since the banana does it for me and I only add a tiny amount of milk, just the needed, to make the perfect consistency! Eat it two or three days every week and Sayri asks me for them too. I add cacao as well and, when craving a dessert, I make it with extra cacao
Other favorite breakfasts are avo toast and arepas but I am kind of lazy with breakfast as well hahahah
Oh yum, I imagine it would be amazing with cacao too! And I don't mind eggs especially from my own chickens!

About breakfast, we have diversity in the family LOL. My husband is Egg Pro, I'm like No breakfast, a tea or a smoothie and my little one loves pancakes (all kind) or chia pudding. hehe

My favorite breakfast for a few months now is fresh fruits and homemade dairy-free cashew yogurt... it's about the only thing that I can eat that early. Plus it's super fast to throw together. I get up at 4:45 am to make it in time to open our mobile bakery. But these pancakes sound delish.... will give them a go on a weekend day when I have more time. This morning we had blueberry chia seed pudding for breakfast! Have a beautiful day... here it's super hot.
