If am asked to replace anything with solid foods for a whole day , i would probably choose fruits.
My love for fruits was born from my father's love for fruits, Let's say i inherited it lol.
My dad loved fruits that he would filled a particular basin with different fruits and we would consume it within few days.
Now ive learnt to combine fruits with different dish and make amazing sauce with them and i know he would have loved it too.
Plum is one of the fruits that i can't resist, and that's the reason it first came to my mind when i thought of making a vegan sauce for a rainy cold weather.
Combining my plum with coconut milk is something, i would love to make over and over again.
Let me show you how i made my crispy fried potatoes with my plum coconut sauce
- 3 big piece of plum
- 1 big coconut
- 1 lime
- 3 large potatoes
- 1 teaspoon of salt
- 1 cup of frying oil
Grate the coconut
Wash and grate the coconut. you can blend, if you have a strong blender but if you don’t, grating is ok.
Add water and steam for 2 minutes then separate the water from the chaff and set aside.

de-flesh the plum
Wash the plum with water, discard the peel, remove the flesh from the seed and set aside.
Blend or smash the flesh using a spoon (i smashed mine using a spoon)
Add the coconut and lime to the smashed plum
Add the boiled coconut milk to the plum (not all , just enough to maintain it's consistency)
Add the lime and stir till everything is evenly mixed.
Your plum sauce is ready, waiting for our fries 🍟.
Remove the potatoes peel and cut to your desired shapes
I wash my potatoes , removed the peel and cut to my desired shape.
I sprinkled my 1teaspoon of salt and shake it till the salt distributes round the potato.
Fry the potatoes
I poured my groundnutoil into my pot and placed it in a stove, allowed it to get warm and then transferred my potatoes to the oil, allowing it to fry till it's golden brown or well fried.
Serve the fried plantains with your amazing plum sauce.
I know plum to be an amazing fruit that has a combination of sweet taste and acidic taste.
Making it a nice fruit for a vegan sauce.
This sauce isnt just nice but it's worth trying.
