Eggplant Curry
Ingredients
one large eggplant
two tablespoons vegetable oil
one teaspoon cumin seeds
one medium onion, thinly sliced
one tablespoon ginger garlic paste
one tablespoon curry powder
one tomato, diced
half cup plain yogurt
one fresh jalapeno chile pepper
one teaspoon salt
quarter bunch cilantro
Instructions:
Put eggplant on a medium baking sheet. Bake twenty to thirty minutes in the 450 degrees preheated oven, till tender. Remove from fire, cool, peel, and chop.
Heat oil in a medium pan over medium flame. Combine in cumin seeds and onion. Cook and mix till onion is tender.
Combine ginger garlic paste, curry powder, and tomato into the pan, and cook about one minute. Mix in yogurt. Stir in eggplant and jalapeno pepper, and season with salt. Cover, and cook ten minutes over high flame. Remove cover, reduce fire to low, and continue cooking about five minutes. Top with cilantro to serve.
