I saw this recipe posted by @adrianasteems that looked pretty good so I gave it a shot tonight. Give her a follow if you like this.
This is a simple yet tasty meal that is very filling. The ingredients are:
2 sweet potatoes
1 cup of lentils (it could be red or green one it's up to you :)
1 handful of coriander/cilantro
1 full pack of cherry tomatoes
1 red onion
1 lime or lemon
1 vegetable stock
little bit of pumpkin seeds/sunflower seeds
2 Tbsp of Salsa
Tahini (optional - I used it just on top)
I didn't have the vegetable stock or tahini, but it still turned out good. Here are the steps:
DIRECTIONS:
Preheat oven to 180 degrees C. Poke a few holes in the sweet potato with a knife
Once oven is hot, bake your sweet potatoes for 40-45 minutes
Cook your lentils as per directions on a package - but it usually takes 15-20 minutes
I add to mine 1 cube of vegetable stock for extra flavour
Chopped your tomatoes, cilantro and red onion
Then, mix all the ingredients together
Finally, split the the sweet potatoes and add 1 Tbsp of Salsa, then spread the mixture over the sweet potato/salsa
