Brandade de morue is a classic French dish that beautifully combines the delicate taste of salted cod with creamy potatoes and aromatic herbs. Perfect for both a casual dinner and an elegant occasion, this dish is sure to impress your guests with its rich flavors and smooth texture.
Ingredients
🐟 500g salted cod fillets
🥔 500g potatoes, peeled and diced
🧄 3 cloves of garlic, minced
🌿 1 tablespoon fresh parsley, chopped
🍶 200ml olive oil
🥛 100ml whole milk
🍋 Juice of 1 lemon
🧂 Salt, to taste
🌶️ Black pepper, to taste
Instructions
1- Desalt the Cod:
- Soak the salted cod fillets in cold water for 24 hours
- Change the water every 6-8 hours to remove excess salt
2- Cook the Cod and Potatoes:
- Drain the cod and place it in a large pot
- Cover with fresh water and bring to a gentle simmer over medium heat
- Cook for about 10 minutes, until fish flakes easily
- Remove cod and set aside
- Add diced potatoes to the same pot
- Cook until tender, roughly 15-20 minutes
3- Prepare the Olive Oil Mixture:
- Gently heat the olive oil in a saucepan over low heat
- Add the minced garlic and sauté until fragrant but not browned
4- Mash and Mix:
- Drain the potatoes and return them to the pot
- Mash the potatoes until smooth
- Flake the cod fillets into small pieces, removing bones and skin
- Add the fish to the mashed potatoes
5- Combine Ingredients:
- Gradually stir in the warm garlic-infused olive oil
- Add milk until achieving a creamy consistency
- Add lemon juice, chopped parsley, salt, and black pepper
- Taste and adjust seasoning as needed
6- Serve:
- Transfer the brandade to a serving dish
- Drizzle olive oil over the top
- Garnish with additional parsley if desired
- Serve warm with crusty bread or green salad
