Ingredients

For the Vegetables and Proteins:
🥔 2 pounds fresh potatoes
🥦 1 head of broccoli, cut into florets
🍃 1 bunch of asparagus, trimmed
🥚 6 large eggs
🍤 1 pound shrimp, thawed if frozen

For the Aioli:
🍋 1 lemon, juiced
🥚 1 large egg yolk
🥄 1 teaspoon Dijon mustard

Instructions

1- Prepare the Vegetables and Proteins:

  • Peel and cut potatoes into uniform chunks
  • Cover potatoes with salted water and cook until tender (15 minutes)
  • Hard-boil eggs for 9 minutes, cool in ice water
  • Steam broccoli florets and asparagus until tender (5 minutes)
  • Cook shrimp in boiling salted water until pink (3-4 minutes)

2- Make the Aioli:

  • Whisk egg yolk, lemon juice, and Dijon mustard until smooth
  • Gradually add olive oil while whisking constantly
  • Stir in minced garlic
  • Season with salt and black pepper

3- Assemble and Serve:

  • Arrange cooked potatoes, broccoli, asparagus on a platter
  • Add hard-boiled eggs and shrimp
  • Serve with fresh aioli on the side
