Every cup of coffee has a story to tell. An interesting story, starting from the cultivation and harvesting of coffee cherries in many countries in many regions of the world. From these countries, coffee travels to carry the story of mixing, roasting and grinding. These processes are the result of craft traditions passed down from generation to generation, which have contributed to the birth of a true coffee cult.
But no matter how true it is that behind each cup of coffee is a evocative and charming story, behind each cup of espresso lies much more! Espresso is coffee made "expressly for you", quickly and individually. The most important advantage of this extraordinary process results from the unique opportunity for espresso to obtain an emulsion of the oils present in the ground coffee.
The literal meaning of the word "espresso" can be expressed as "done right then, on the spot". This coffee preparation method was created in response to the slow pace of other methods that resulted in the loss of flavor of the hot infusion prior to consumption, thereby increasing the rate of passage of water through the milled coffee dose by increased pressure . It is an extraordinary beverage, a jewel of chemical and physical engineering, aromatic, with a full and velvety taste: it is fragrant because the emulsion created by the pressure of coffee oils releases the aroma that dissolves in hot water, tries to escape but is immediately captured by to the cream; is softer because sugar, proteins and fats have emulsified together.
