I have started baking more now that my brother has started a cloud kitchen here in Mangalore. One of my best sellers has been these beautiful yummy strawberry jelly and vanilla cupcakes with whipped cream topping.
They were an experiment I tried out and worked really well in taste profile and aesthetic.
The saltiness of the basic vanilla cupcakes and the sweetness of the strawberry jelly is what makes this combination work so well. The jelly also adds a beautiful pop of reddish-pink colour to the pastel shade of the cupcake.
I opted for a whipped cream topping rather than a traditional buttercream topping as the former is lighter and complements the dish quite well.
