Hello everyone!
Today I bring you another recipe on how to make gluten free, and oil free ginger oatmeal cookies.
These healthy and delicious cookies are great for tea time or an afternoon snack.
You will need:
• ½ cup of steal cut oats
• ¼ cup of sifted oat flour
• 1 tablespoon of ginger powder
• 1 teaspoon of baking powder
• 1 tablespoon of shredded ginger (optional)
• 1 tablespoon of cinnamon
• 1 tablespoon of honey or molasses
• 3 tablespoons of sugar
• 1 tablespoon of water
• 1 tablespoon of vanilla extract
Pour in your oats, oat flour, cinnamon, ginger powder, baking powder and sugar in a medium bowl and mix well. Add in your honey or molasses, vanilla, fresh ginger and water until you have a crumbly and flaky dough forms, it should have the texture of pie crust dough. Shape into balls of any size, and place them on a prepared cookie sheet, then bake in a pre-heated oven at 350 degrees Fahrenheit for about 15-20 minutes.
