Sweet Cinnamon Biscuits

Hi!
Today I am going to share with you my favorite oil-free, dairy-free cinnamon biscuit recipe. You can create these delicious cinnamon treats for many occasions; in my case I am just doing mine for my family.

Ingredients:
• 2 cups of sifted flour (I used whole wheat)
• 1 tablespoon of baking powder
• 1 teaspoon of salt
• ¼ teaspoon of baking soda
• 2 tablespoons of honey
• ¾ cup of almond milk or any plant based milk
• ¼ cup of sugar (I used stevia)
• 2 tablespoons of cinnamon powder
• 1 tablespoon of lime juice

In a medium bowl, combine the flour, baking powder, salt and baking soda and mix well. Stir in the honey. In a mug combine your almond milk and lime juice and mix well, incorporate it into your flour mixture until it forms a kind of sticky dough.
Knead the dough on a lightly floured surface until it is smooth. Roll out the dough into a long flat rectangle.
Now it is time to pre-heat your oven at 400°F. Line your pan with parchment paper or place your rolls on cupcake liners. Mix the sugar and the cinnamon and dust all over the rolled out dough and roll it up like a jelly roll. Cut out your roll into slices, the amount of rolls vary on how thick they are, then place them on your parchment paper pan or cupcake liners and bake for 25-30 minutes or until they are nice and brown.
After taking them out of the oven, I like to pour a ¼ cup of almond milk on them just to make them a little softer because these rolls have a biscuit like texture, but this step is optional.
Serve hot with your favorite coffee or tea. Enjoy!
