Not too sweet, Not too rich, even better the next day, a cake you could eat every day!
So easy and quick to whip up for the kids too!

Ingredients:
1 c. sugar (I use coconut sugar, cut back 1/4 c. if using cane sugar)
1/2 tsp salt
1/2 tsp baking soda
1/4 c. cocoa powder (I love Rapunzel brand)
1.5 c flour
6 Tbsp oil (I use melted butter)
1 Tbsp vinegar (I use apple cider vinegar)
1 c. water
Mix everything together. I start with the butter and sugar and end with the flour but this cake is so forgiving the order doesn't really matter. It will have an interesting texture because the baking soda reacts with the vinegar making gas bubbles. Not to worry, the texture comes out just fine. Make sure there aren't flour pockets but don't overmix!
Bake in a 9x9 or 8x8 at 350 for 30 minutes or until a toothpick comes out clean. Let cool about 20 minutes before digging in!
