I am thinking about dessert today. Donuts won over pizza. Hehe. Might as well share a sample recipe for making a Banana butter bread doughnut.
BAKING TIME: 24 - 28
Prepare the following.
Toppings
3 tsp. ground cinnamon
2 1/2tsp. salt
2 1/2 c. all-purpose flour
1 c. cold, unsalted butter, and cut into small cubes
1 c. granulated sugar
Donuts
1 1/2 c. granulated sugar
2 1/2 c. banana (from about 3 medium bananas) mashed
2 tsp. baking soda
1/2 c. Buttermilk
1 1/2 tsp. ground cinnamon
2 tsp. vanilla extract
1 tsp. freshly nutmeg, grated
3 large eggs
1 tsp. salt
3 c. all-purpose flour
1 c. browned butter, slightly cooled
Glaze
8 tbsp. whole milk
4 c. confectionery sugar
2 tsp. pure vanilla extract
A pinch of salt
6 tbsp. unsalted butter, melted
DIRECTIONS
Pre-heat oven to 350ºF.
Use two doughnut pans. Grease it with a cooking spray.
Next, line a baking sheet with a parchment paper.
Now for the crumb toppings,
Get a clean medium bowl.
For the first batch, whisk together the sugars, flour, salt and cinnamon.
You can now add the butter. Using your fingers, blend the butter into the mixture.
Spread it evenly on a clean baking sheet.
Bake it for 20 to 22 minutes, twice stir, until it becomes lightly brown.
Let it completely cool down.
For the doughnuts.
You will be needing a large bowl.
Incorporate the sugar, cinnamon, salt, flour, baking soda, and nutmeg.
We will be needing another medium bowl to whisk altogether the eggs, buttermilk, browned butter and vanilla.
mashed and whisk bananas.
Combine the mixture all at once into the first flour mixture.
Do the folding method, gently and completely scrape from the bottom of the bowl to cover all portions flour, unmake sure not to over folding.
carefully spoon the ready batter into the prepared doughnut pan.
Bake it for 14 to 17 minutes, Check it by inserting a toothpick in a doughnut. Clean toothpick means it is ready!
Cool it in the pan for about 5 minutes prior transferring to wire rack to continue the cooling phase.
For our glaze.
Using a medium bowl
Mix together the confectionery sugar with the salt.
Next to whisk in is the vanilla and butter with the 2 tablespoons of milk.
You may add more milk if you prefer for a more thin spreadable consistency mixture.
Once completely cool, get a butter knife to spread the top of each doughnut with glaze.
Make sure your hands are clean, grab a handful amount of crumble and have it as a toppings for each doughnuts.
Let it set for 12 to 15 minutes prior serving.
Mind that doughnuts are best serve the same day. Should you keep it for next day snacking, keep it in an airtight container at room temperature to maintain it's softness and taste.
