I'm always looking forward for this day to come for this will be the start of our NCII (National Competency) Training. We are taking the course of Bread and Pastry Production (BPP), and this is one of our recipe, the Cinnamon Roll.
Before we start baking, our trainor Ms. Annabelle Motarte did the demonstration first. She teaches us the whole process. From the correct measurement of ingredients to the proper way of mixing it and putting it in the oven.
Finally, It's our time to do the baking. Now I'm going to share with you how it was done. First we prepare the ingredients:
2 and 1/2 cups of flour
1/4 Cup of White sugar
1/4 Cup of Evap Milk
1/4 Melted Butter
1/4 Cup Lard
1 pc Egg
Pinch of salt
In doing this, we need to:
- In a bowl add flour, pinch of salt, white sugar, evap milk, butter, egg and yeast.
- If the dough is thick, add lard (gradually).
If the dough is already soft, it's time to flattened it.
Flattening the dough
After the dough is flattened, we can now add the filling. For the filling, we need :
1/4 Cup Butter
1/4 Cuo Brown Sugar
2 Tbsp Cinnamon Powder
1/4 Cup Peanut (Chopped)
1/8 Cup Raisin (Chopped)
In making the filling, we need to:
- Spread the butter in the flattened dough mixture
- Mix and Sprinkle sugar, cinnamon powder, peanuts and raisins in the flattened dough mixture.
After putting all the filling, we can now roll the dough.
After rolling, we will now cut the rolled dough into 12 pieces depends on you. We will now put it in the muffin pan.
We will now heat the dough under the sun for it to easily expand. Leave it upto 20-30 mins.
When you observe that the dough is now expanding, it's now ready for baking.
Before putting in the oven, we need to prepare 1 shaked egg and put small amount in every cinnamon.
After putting egg in every cinnamon, we can now put it in the oven and baked it for 15 to 20 mins.
Lastly is the glaze.
In making the glaze, we need:
1/2 Cup confectioner sugar
2 Tbsp water
Just combine the sugar and water.
And Wow! You can have your freshly baked cinnamon rolls
