Chicken betutu recipe (Balinese food)

This recipe is the one I use at home, the taste will be different from the taste like in the famous stall, because every stall will have its own taste and have a secret spice. This recipe I make is very simple.

The main ingredient :

  1. fresh chicken size of about 1 kg that is clean from the innards. Can also be replaced with a duck with the same size if you like. Can be whole or cut into pieces according to taste.
  2. The stem of lemongrass is approximately 7 stalks. Wash clean and then finely sliced.
  3. Leaf lime leaves about 10 pcs. Leaves more or less as much as 6 pcs only.
  4. Water to boil

Ground spices :
Finely spice / spice seasoning that I use is a ready-made spice (instant) can be found in the market or supermarket.

  12. Terasi 20 gr (In Indonesian, I can not find in English. Made from fermented fish and / or fried rebon shrimp, shaped like dough or pasta and black-brown)
  13. Salt to taste
  14. Coconut Oil 20 ml
  15. Cloves 5 seeds
  16. Nutmeg 1 fruit
  17. Black Pepper 1 tablespoon
  18. White Pepper 1 teaspoon
  19. Coriander 1 teaspoon

  21. Jangu (Similar to lemongrass)
  22. Temutis (Similar to turmeric or ginger)
  23. Temukunci (Similar to turmeric or ginger)
  24. Bangle (Similar to turmeric or ginger)
  25. Lenge
    (All the ingredients in sliced ​​/ mashed in stir fry until fragrant and ripe)

How to cook:

  1. Enter the chicken, finely spices, lemongrass, bay leaves, lime leaves, chili (adjust the level of spicy usually 1 chicken I use chili 5 or 7 seeds) and water (to cover the chicken).
  2. Add salt, pepper and flavoring (to taste)
  3. Boil until boiling until the chicken is tender and the water is reduced.
