Why I stopped grilling raw meat

If you are a carnivore like me you will have enjoyed your well deserved steak fresh from a grill.
IMG_1825.JPGIts a delicious way of preparing meat but surely not the best option.

Unless you are very experienced it is very easy to over or undercook your steak and the results may vary from a piece of steak to another . When grilling, your steak shrinks due to a loss in moisture and the high temperature. It might even get tough.

The best way to prepare a steak for me personally is sous vide (french for under vacuum) (that means to cook with very low temperature in a water bath and then to place it on the grill or inside a hot pan for a short time to create a nice crust)

It is a bit time consuming, but well worth the effort.

You will need high quality ziploc bags, or a sous vide bag that you vacuum seal at the end.

Please do not add butter to your steak inside the bag. It makes a huge difference and takes away a lot of the meat flavor at the end

Please season the steak before putting it in the sous vide machine or in the pot. Salt and pepper and add herbs to your liking!
If you want a garlic steak, use minced garlic from a can or dried powdered garlic. It makes a sensational aroma.
Fresh garlic is very weak compared to the dried one

Once your meat is seasoned you can put it into a sous vide bag or a thick plastic bag with a zip lock. Try to get all the air out.
Or simply use a vacuum sealer.

Set the temperature to your liking
51°C or 124°F Rare
56°C or 133°F Medium-Rare
60°C or 140°F Medium
64°C or 147°F Medium - Well Done
70°C or 158°F Well done

And set the timer for your steaks bath.
You can calculate around 20 Minutes per cm or 45 per inch.
So my beauty of a steak would need 4cm*20minutes = 80 minutes of bath in a 56°C hot sous vide machine or in a big pot with 56°C hot water and a good thermometer.
Its just a bit hard and time consuming to keep the temperature at the same level. But nothing is impossible and it is well worth it!

I have read that black charred meat is also very unhealthy and can cause cancer, so I do not like grilling for that reason as well.

You should really try sous vide. Even chicken breast tastes amazing- It is juicy, super tender and huge at the end. Just season it and put it in the machine for 2 hours at 60°C. Its the best youve ever hat

I agree Sous vide is the way to go..
but it does not mean "precook" like you say...

Sous vide, means “under vacuum” in French, and refers to the process of vacuum-sealing food in a bag, then cooking it to a very precise temperature in a water bath.

It can then be eaten, or another cooking technique applied as you are suggesting.

Ups, you are correct sir! Well I guess its never to late to learn :D
