I'm suddenly very hungry...

My wife is cooking tonight, but I made smoked leg of lamb yesterday. My new favorite smoking wood is peach. We have an old peach tree that I save prunings from. The smoke smells so good you could drink it.

I love to mix peach and apple for pork ribs. I highly recommend mixing your woods to crest new flavor profiles. For chicken I'll sometime use peach and finish with hickory for a heavy "traditional" smoke flavor.
