One of the differences is consensus algorithm, Ripple was launched in 2012, with the goal to engage with financial industry leaders. Ripple Uses Probabilistic voting model witch implemented by Ripple Protocol consensus algorithm. Stellar uses different consensus algorithm, It uses Stellar Consensus Protocol.

XLM 103 billion supply w/ 1% fixed increasing annually. Where as XRP burns. XLM 2-5 seconds transition times, XRP 4 seconds. XRP is c/c++ Javascript Java, GO while XLM is the same except no JAVA. Although not are very similar they target two different markets. Stellar is targeting individuals, while Ripple is targeting financial institutions. Stellar is a non profit org, Ripple is not.
