Potato and Onion Soup… because it’s cold outside!

It’s really cold outside and I’ve got my hands all freezed up which I hate. I am more of a summer lover and it is not that normal that we have cold winters and really windy days. But this is what we are getting :(

Well, for this reason I had to create a nice hot soup. It is named ‘the poor soup’ as it is one of the cheapest recipes with the cheapest ingredients you’ll find at your market; potatoes and onions. The potato and onion soup idea came up while my dad bought these lovely white onions from the market and as we had already some potatoes in the veggie rack, I combined these ingredients to create a delicious potato and onion soup recipe for cold winters. Being it cheap, this recipe will save you loads of money this winter.

Now, I know you can use leeks in place of onions in this recipe but the taste will be different as leeks are more sweet in taste and cost more. I am off to have a cup a soup of this soup as I am just craving for it. Enjoy it people!

Potato and Onion Soup

INGREDIENTS

3-4 medium sized potatoes, peeled
3 medium sized white onions, roughly chopped
600ml/2 cups 3/4 vegetable stock
1 small carrot, roughly chopped
150ml milk
pinch of nutmeg
1 sprig of rosemary
3 tbsp extra virgin olive oil
salt
pepper

METHOD FOR THE POTATO AND ONION SOUP

  • In a deep pot heat up the extra virgin olive oil and fry the white onions and the carrots for 3 mins.

  • Add the roughly chopped peeled potatoes to the pot and mix with a wooden spoon.

  • Then add the nutmeg, rosemary and seasoning.

  • Add the vegetable stock and leave to boil and then simmer for 15 mins untill the potatoes are thoroughly cooked.

  • Finally add the milk and continue cooking for 5 mins.

  • Blend the soup using a hand blender or a food processor

  • Then pass through a fine strainer and serve hot with some chopped rosemary on top.
