Sunday and I have some extra time to cook and experiment.
I had some rice left and figured I should make risotto.
Here are the main ingredients :
Rice : 150 gr
To make risotto you need a special kind of rice. In my case, arborio is the rice of choice.
Mushrooms : 50 gr ( dried )
I got dried mushrooms from an Asian grocery store. They are called Black Fungus. They look like leather straps and have the same texture unless you cook them for a long time. Most probably will not buy them again.
Additionally, I used an onion , garlic, ginger and some shrimps.
You dice the onions and throw them into your cooking device along with the mushrooms.
You can add some alcohol for flavor and then you put the rice.
Now, you have to add liquid, wait for the rice to absorb it and repeat until it is done. Initially, I used the broth of the mushrooms and then added water.
Mince the ginger and the garlic and add whatever spice you fancy.
In the last couple of minutes, you add the shrimps, because they don't need much cooking.
Don't tell my dietician but I finished with butter for flavor and texture.
In traditional risotto recipes, you add parmesan but I didn't have any and garnished with nutritional yeast.
I love cooking and experimenting with ingredients and flavors. Not always it is successful but it is always fun !!!

Anyway, that was my lunch today .
