Oh my gosh it's way too windy again!
You can feel the cold wind all throughout the cabin. We have just tried to improve some isolation by hanging up any curtain we still had lying around. It's not pretty and most aren't even long enough, but atleast it's something. I think we'll have to take the curtains I still have in my home back with us next time. Not ideal either, but atleast they're long enough to cover an entire window.
I don't necessarily mind winter in the cabin so much, but I do hate it when it's this windy. Isolation is pretty non-existing here, so it's impossible to keep the place warm with our woodstove, though it's trying very hard. I just checked the weather report and noticed the wind will stay this strong for a whole week. It'll even increase for a day or two! So that's when I got pissed off and went on an isolation rampage.
The most annoying thing is that with this kind of weather, I can't do much else besides sit close to the woodstove. So even when I have the energy and inspiration to do something on the pc, I can't hold out for long, because it's just too cold here.
Well, I ordered a curtain from AliExpress as an experiment to see if we like the thing and if it works to keep the cold from the windows out. Just gotta wait until it gets here. I'll probably order more if it works. Otherwise, we'll just have to shop for good curtains here.
Anyway, so I finally transfered pictures from my phone over to my pc, so I can now show you my horrible limoncello experiments.
I first tried a Dutch recipe for Limoncello mousse. It turned out quite a boring mousse, so I won't be making that again.
Next, I tried a Dutch recipe for Limoncello cake. I didn't have all of the ingredients though, so I switched a couple... I shouldn't have done that.
This 'cake' turned brown on the outside way too quickly and once it was out of the oven, it quickly went completely flat again. Then, my icing wasn't thick enough, so most of it dripped off the cake. In my defense, I've never made icing before, so I think I'm allowed a screw up on that one.
The cake's sides didn't taste good and the insides weren't a lot better either, so after I let my boyfriend taste it, I threw it out. It was a mutual decision.
My coconut macaroons from a couple of days later turned out great though!
I'll share that recipe with you guys soon!

Oh, the coconut macaroons are so easy to make and they were the only ones that tasted really good! I'll share that recipe soon :D
