My favorite healthy meals in a time-crunch:
- vegetables and hummus - veggies like carrots, cucumbers and cherry tomatos dont even need to be cut. Keep hummus on supply, it'll last
- greek yogurt (7g sugar per serving), almonds, walnuts, raisins, and/or honey. Get some good honey and you will LOVE this easy parfait. I mix my ingredients right in the yogurt quart.
- roasted butternut squash: if you don't have time but can wait an hour, just cut a the squash in half, drizzle some olive oil over it, and pop it in the oven for an hour. Wah-la, 1 hour later you've got yourself a meal. Sprinkle some salt to taste
