Hi again!
Im not sure about all of you but breakfast is without a doubt my favourite meal of the day. Ive only skipped breakfast a handful of times, and i felt incredibly groggy and could hardly focus on anything. I understand that breakfast can sometimes make people feel sick in the mornings, but it could be beneficial to attempt to introduce small snacks and slowly build yourself up :) Fruit is a quick and easy option that isn't too heavy on the stomach, but gives you a bit of an energy kick in the morning without a caffeine kick. You'll quickly discover that different renditions of oats and fruits are my go-to breakfast, and this morning involved baked oatmeal, banana, blueberries and a variety of toppings.
The recipe was as follows for a single serve:
- 1 cup rolles oats
- 1 tsp cacao powder
- 2 tbsp dessicated coconut
- 1 tbsp. natural peanut butter
- 1 tbsp flax seeds
- 1 tbsp chia seeds
- 1/2 a green apple, cut into small chunks
- 1 tsp ground cinnamon
- dash of coconut water and almond milk
Mix together the above ingredients until loosely combined and put onto a lined baking tray. If you like things a bit sweeter, sprinkle some coconut sugar or pour a little maple syrup over the top :) Place under grill for 5-10 minutes until cooked and crunchy. Serve with sliced banana, pecans, blueberries, cacao nibs, pecans and coconut.
