过年了买只羊，请人料理了一锅。等大年三十，加些豆腐炖了，岂不美哉？这次是一只三年小山羊，很瘦，肉很有嚼劲。汤里就加了些姜、花椒还有当地特产山花根，此外向人讨要了一颗“禁果”加了进去，果然如画龙点睛，整锅羊肉香气扑鼻，让人欲罢不能。
羊肉深红发暗，瘦到除了羊油肥肉很少，可以说捡了个大便宜。同样是买只羊，价格是一样，瘦肉越多越赚。给我杀羊的老头说，他和羊打了一辈子交道，平日里也离不开羊肉了。如果没有人找他杀羊，他也会跑到馆子里去吃。他在外边吃羊肉，只吃两个部位：羊下水和羊蹄。“这两样是绝对做不了假的”他那自信到牛逼轰轰的样子依然能清晰的浮现在我眼前。
值得额外一提的是，老头神秘一笑，给我点出了一样好东西，就是下图那个，这个是羊的食道，他们当地叫“食嗓”，特地留下整根，没给我切碎。我一回到家就迫不及待地煮来尝尝，劲道弹牙，犹如牛筋，却不像牛筋那般无味，有着浓浓的肉香，而且一点儿也不塞牙，确是上品。
