Made 2 totally different brews today. Same bean: Keramo from Little Wolf. C40 grinder. One was 27 clicks on a V60, 4 pour, swirled bloom and second pour like a madman. Bright and complex (but not fully dialed in).
The other was 16 clicks, slow-fed with a negotiated Sibarist fast on a porcelain Orea with a booster and WWDT bloom, low agitation 2-4. Insanely sweet, delicious, not at all bitter.
I wish I had some idea exactly what I was doing. Doing something, I guess. Experimenting, really. I’m not sure I aspire for consistency, to be honest. Coffee rested only 3 days.
Probably learned a lot of things. But maybe mostly about personal preference, for taste and process. I think I’d rather have one 10/10 coffee a week, and others relatively subpar, than all ~7-8/10’s. If chaos and RNG is a path to that, I might be down for it. Of course, maybe that’s just giving up on achievable consistency, and I’m up for that too if I can get there 😂.
If I had to drink one variation forever, I would choose the 16 clicks. But I know the coarser approach wasn’t quite dialed in, or maybe didn’t extract as evenly.
Context and psychology is a big thing too. Like, I’m very critical with my own brews. Yet I’m 99.9% sure if I had either of these brews at a cafe, I’d call it my fav cafe ever.
