While they might look a little unusual to the uninitiated, pandan flavoured pastry is a perfect compliment to the tangy sweetness of a pineapple tart. The secret is to hold back on the pandan so that it doesn't compete with the pineapple as the main flavour, but instead offers a salty-sweet note as a compliment to the filling.
