What's Pattypan? It is not long or round,
Nor typical of the varieties that we know.
What's in a name? That which we call a squash,
But by any means, you taste just as tender and sweet.
Disc-like, and in the form of a scalloped flying saucer, Pattypan is a summer squash varietal not typically found in the big named grocery stores. Also known as cymling, granny, button, custard, or sunburst squash, they come in a range of colors from green to white to yellow. Like its other squash kin, these varietals are very mild and versatile in pairing with other vegetables. However, the smaller squashes are oft the most tender, with a buttery or olive oil-like flavor. Local growers in my area seem to have taken an interest in these vegetables, so keep a look out on your next visit to your local farmer's markets.
