If a crime has been done and an accused is caught in the act, would the policeman say "I am arresting you because according to my "personal" judgment you are doing bad? I did not learn it in a book, I've learn it on my own."?

That is not what you asked. You asked < How do we define good and evil? I answered your questions honestly. So no changing the subject. It is a personal question, it is a question each person needs to decide for themselves.
I don't believe in absolute evil and absolute good. In order for life to operate this is a balance and ying/yang. You cannot have one without the other. You cannot have man without woman. You cannot have life without air and so forth. Yes, there can be an out of balance, nothing is perfect.
I know people that based on their small minds have called me evil. Yet would an evil person go out of their way to help others in need. Help settle the mood when they're stressed. Give the shirt off of their back to help friends and family? Come on a platform and work with groups that want to build up others so they succeed for no other reason then to help them out?
Can a 'good' person commit a crime yes. Can a 'bad' person do a good thing, yes. You're point is moot.
