Correct. The only enemy where the pickpocket-before-attack rule does not apply is Gobbo. If you are forced to face off against Gobbo, you must attack Gobbo first and then you may choose to pickpocket Gobbo after successfully defeating him, before you head back to take on the stage foe.

The dragon is already dead; your pickpocket attempt is null and void. Pickpocketed items do not carry over from round to round either in this IBT.
