And I have to say that looks really good. The presentation is excellent, and the way they've scalloped the edges of those cucumber slices is a very nice touch. The only thing I might do differently is the color of the plate; a lighter color would have provided more contrast.
I worked in the restaurant business for years, mostly waiting tables in upscale Italian places, and I learned that presentation is hugely important. It affects the diners' perception of the meal before they even taste that first bite, and predisposes them to a positive impression. Women in particular are attentive to presentation.
Then again, men and women eat as differently as they shop.
Men eat like dogs; they like big chunks of food they can sink their teeth into, and if there's a bone all the better. You can sometimes hear them growling softly as they eat.
Women eat like cats, in that they are more picky and they will eat things in small pieces that they wouldn't touch if you served it in one piece.
Drop a big hero sandwich in front of a group of women and they will protest that it's too much. But cut that same sandwich into bite-sized pieces, and secure each one with a toothpick that has the little colored dealie on top, arrange the pieces in a pattern on a bed of lettuce with a few carrot curls and radishes around the edge for color, and they will eat "just one bite" until the whole sandwich is gone, often without even noticing what they are doing.
