After some experimenting with different recipes I found just about the most perfect vegan chocolate chip recipe. None of my siblings or parents could tell that these cookies were vegan, and I got plenty of good reviews from them.
Ingredients:
3/4 cup Coconut sugar
3/4 cup Brown sugar
1 tsp Vanilla extract
2 tbsp Organic milled flax seeds
6 tbsp Water
1tsp Salt
1 tsp Baking powder
1 tsp Baking soda
1/4 cup Olive oil
2 1/4 cup All purpose unbleached flour
1/2-3/4 cup Dairy free chocolate chips(add more as needed)
Directions:
Pre-heat the oven to 350° fahrenheit.
To make 2 flax egg combine 6tbsp of water with 2 tbsp of ground flaxseed, mix and set aside till gooey consistency.
Mix together flour, baking powder, baking soda, and salt.
In large bowl mix all sugars, Olive oil, vanilla extract and flax eggs till combined. Mix in dry ingredients and this is when it's seems dry and crumbly so I start mixing with my hands and if it still seems super dry add water or Olive oil till it can be handled and moldable, but not too sticky or wet sticky. (The dough will at the end be a little crumbly but as long as you can mold it into a ball it should be fine.) Add dairy free chocolate chips as needed.
Roll dough into 2inch diameter balls or measure with tablespoon. Place on parchment paper or foil lined baking tray about 2 1/2 -3 inches apart. Press down slightly on dough and bake for 10-14 minutes or until the edges are crispy and the bottoms are browned.
