The case when preparing a tasty and impressive dish requires a minimum of effort. Cut, sprinkle with oil, spices and send to the oven! I especially like the idea here to chop tomatoes and a head of garlic horizontally - it looks very beautiful! A great option for a family lunch or dinner with friends.
For extra sweetness, tomatoes are often baked with a little sugar. You can use any unrefined sugar, you can experiment with Jerusalem artichoke or agave syrup, or you can just skip this point in the recipe. For the vegan version, instead of feta, you can bake tofu or serve vegetables with your favorite bread.
Baked Tomatoes with Feta Cheese and Garlic:
- 3 large tomatoes cut in half horizontally
- 300 g cherry tomatoes or tomatoes on a branch
- 400 g of feta cheese
- 1 large head of garlic, cut in half horizontally
- a few sprigs of thyme
- salt pepper
- 10–15 ml unrefined sugar
- 60–80 ml of extra virgin olive oil
- lemon juice
Preheat oven to 180C.
Place on a baking sheet large tomatoes with the cut side up, add cherry tomatoes, feta cheese, garlic and thyme. Sprinkle with salt, pepper, sprinkle tomatoes with unrefined sugar. Pour all over with olive oil and a small amount of lemon juice.
Bake for about 45 minutes until cheese and garlic are browned.
Remove from oven and serve hot or at room temperature.
