BEST CARROT CAKE |• RECIPE

The carrot cake is high, moist and fluffy. If you have a carrot in your home, it will be the best and tastiest way to use it. A simple glaze of salty cheese can be made into a cake, but without it it is equally delicious. With the same topping, you can also translate the dough and get a carrot cake. I bake a carrot cake in a springform pan with a diameter of 26 cm, but you can also use a rectangular plate.

Components:

1.5 glasses of grated carrot (about 3-4 carrots)
1.5 glasses of flour
4 eggs
1 glass of oil
1 glass of sugar
1 teaspoon of baking powder
1 flat teaspoon of soda
1 teaspoon of cinnamon
1 teaspoon of gingerbread spice (can be omitted)
1 tablespoon of vanilla sugar
1 glass of chopped walnuts
half a teaspoon of salt
Preparatory actions: Carrots are rubbed on a fine mesh grate. Cut the walnuts or break into small pieces. The oven is set to 180 ° C and we are getting too heavy. Eggs are beaten with a mixer with sugar and vanilla sugar for about 3 minutes. We start to pour the oil slowly - the dough absorbs the whole while mixing. Whipping constantly, gradually add the flour mixed with salt, powder and soda. The dough should be thick. We add cinnamon and eventually gingerbread spice. At the end pour the imprinted carrots and nuts, and mix for the last time. The form (preferably a cake tin with a diameter of 26cm, can be with a chimney) is greased or lined with baking paper. Pour the dough and bake it for 45-55 minutes. (it is best to check with a stick).

Carrot cake is sprinkled with powdered sugar (I like it the most) or smeared with glaze:

Icing:

100 g of creamy, salty cheese (eg Philadelphia, Ostrovia, Almette)
3-4 teaspoons of honey (or about 5 tablespoons of powdered sugar)
2 tablespoons of butter
The butter is grated with a mixer or by hand. Add a cheese spoon to the finish. Sweeten with honey or possibly powdered sugar. We lubricate the top of the cold dough with butter and cool in the fridge. If the dough we want to further translate with mass - we double the amount of glaze ingredients. We cut the carrot cake in half then and spread it thinly.
