do you know that,Orange-fleshed sweet potatoes may be one of nature's unsurpassed sources of beta-carotene. Several recent studies have shown the superior ability of sweet potatoes to raise our blood levels of vitamin A. including vitamin B5, vitamin B6 and manganese .
so here I want to share you my one of the favorite dish of sweet potato called melting sweet potato.
ingredients-
1/2 lb. sweet potatoes, peeled and sliced roughly equally size
1 tbsp. brown sugar
ground black pepper
1/4 c. maple syrup
1 tbsp. melted butter or extra virgin olive oil
1/2 c. toasted pecans, choppes
salt
method-
Preheat oven to 500 degrees F. Spread the disks on a roasting pan, making sure they are not touching. Melt 2 tablespoons of butter per pound of sweet potatoes, and drizzle it on top. Sprinkle on the salt and black pepper. Toss sweet potatoes in melted butter. Bake for 20 minutes, until the bottoms are starting to turn golden. The potatoes are done when they're golden brown and crisp, and the insides are light and fluffy. Meanwhile, whisk together maple syrup and brown sugar.
Reduce oven temperature to 425 degrees F. Pour maple syrup mixture over the sweet potatoes. Return to oven and bake for another 10-15 minutes, until the syrup has reduced down and is bubbly.
To make the maple pecan sauce: -
bring the maple syrup to a boil in a small sauce pan. Add the pecans cook for 1 minute, and then remove from heat. pour pecans sauce on top of sweet potato before serving.
