Sumertime Wings
For most people the summer is about hanging out with your friends, enjoying the weather while having a couple of drinks and snacks. Wings are a great snack to take to that local block party because they are relatively inexpensive and always a great crowd pleaser. I'm going to show you how to make some great wings using some simple seasonings and a grill to give it that great summer flavor that everyone loves.
Two batches of the wings I'm going to be making are done with flavors available over at The Spice Lab. They provide a ton of great flavors to make a variety of wings just by marinating with a pre-built seasoning. The 3rd batch is a home spun sweet Asian style wing.
- Prepping
Start with one pound of wings per batch; remove an dispose of the wing tip and split the remaining piece into the drumet and wing portions. For the The Spice Labs wings we're going to use one Tablespoon of seasoning per pound of wings. Once they are in the sandwich bags gently massage and then place in the fridge to rest over night.
For the sweet Asian wings you need to mix in a bowl the following:

1/4C Light Soy Sauce
1/2 TBSP Vegtable Oil
1 TBSP Worchester Sauce
1 TBSP Franks Red Hot
1/2 TBSP Brown Sugar
1 TBSP Mirin
1/4 tsp Liquid Smoke
- Cooking
Preheat the grill to 275 degrees and spray with a non-stick cooking oil. Cook the wings with the lid down for 40-45 mins. Rotate and roll the wings every 10 minutes. It is OK to allow the grill to get to 300 degrees but more than that and the wings will start to burn.
Pull the wings out and plate the batches that were seasoned with Spice Lab products. The Asian style wings need to have the reaming marinade put into a sauce pan with an additional 1TBSP of brown sugar; reduce the sauce until it starts to thicken. Pour the sauce on the Asian style wings and top off by sprinkling with sesame seeds.
Your finished wings will be loved by all.
