So back in September, I started a new healthy eating plan, going to a local slimming club with a weigh-in and inspirational talks about mindset and eating the right things.
I still attend and I am on target to achieving a 21lbs lost or 1 and a half stone award. It's taken a long time but I feel like I am eating healthy and not on a diet.
But... I did miss my chips/fries, although I didn't eat them that often before I started my journey to good health.
So when they told me you could have healthy chips and fries too... I didn't believe them. Until I cooked some and now they have become my families Friday meal, along with the rest of a traditional fry up but without all the oil.
So I thought I would share with you here the recipe and the cooking process.
Ingredients:
- Potatoes (I usually do one per adult)
- Fry light (Spraying Cooking Oil can come in different flavours)
- Seasoning to help with the browning
Preparation:
- Peel the potatoes and cut them into chips/fries shapes
- Either par boil them in a pan of water or do the cheat method of cooking them in the microwave. I have found that 15 minutes on high in 850-watt microwave does the trick nicely.
- When done, drain and dry them with either a cloth or paper towel. This helps remove some of the starchy stickiness.
- Place them flat on a baking tray, I usually line the baking tray with either tin foil or baking parchment paper (This stops the chips/fries sticking to the tray)
- Spray Frylight on the chips/fries and shake a little seasoning over to help brown them.
- Place in the oven, I usually set the temperature to 210 but your ovens may vary
- Once browned on once side flip them over, spray and season again and brown on the other side.
- Once done enjoy.
