This meal will throw you back in time to your childhood.
You'll need:
2 zucchini
2 eggplants
6 tomatoes
3 cubes of butter
1 onion
3 garlic cloves
1 red pepper
rosemary and thyme
salt and black pepper
Full recipe:
Prepare your vegetables: Slice the tomatoes, zucchini and eggplant into thin rounds, then set aside.
Make the sauce: In a pot add butter, 1 onion, garlic, red pepper and leftover vegetables. Add salt, black pepper and rosemary. Boil for 30 minutes and then mix it to make a sauce.
Arrange the sliced vegetables in patterns on top of the thin layer of sauce. Drizzle with olive oil and season with black pepper and thyme. Cover with baking paper and cook for 90 min on 150°C.
Serve on plate with some sauce and one stalk of chive.

I love ratatouille and haven't had it for ages. I love egg plant (bringal)and think it is so under used in cooking. Got me thinking I will have this over the weekend and surprise the family. Thanks and look forward to the next recipe.
