Delicious White Beans With Clams
Ingredients for 4 People:
- 400g of white beans
- 200g of clams
- 300g of cuttlefish
- Saffron threads
- 1 drizzle of olive oil
- salt and pepper
Preparation
1.- The night before, we wash the beans and put them in plenty of water. That covers them amply. The beans will get quite fat during the 8-12 hours that are soaking.
2.- Put the beans in a pot (pressure or not) and add the water where they had soaked. That sticks two or three fingers over them. Add a splash of raw olive oil and the cuttlefish cut into strips. We also add some saffron strands that will give a brutal touch to the whole dish. Season and cook over medium-low heat. If you have a pressure cooker, in 20 minutes you will be ready. Its not, in about an hour. It is best to try it since each variety of beans has a different preparation time.
3.- When the beans are at their point, we cook the clams on the grill. Once they have opened, add them to the beans and cook 1 minute more. Serve immediately.
