This is my Principessa, Kayla, who grew up on Poppi's Sketti... When I went to visit Sunday, I went empty-handed and was ordered to make Sketti... So I thought I'd share the recipe... With photos...
Ingredients:
2 lbs. Italian Sweet sausage
1 Bell Pepper (3 lobes- best for cooking)
1 Medium Onion
4 Cloves Garlic
Oregano
Basil
Sugar
1-2 Cups Red Wine (I use a Merlot or Cabernet... Remember, if it isn't fit to drink- it isn't fit to cook with)
Directions:
Brown Meat
Chop Peppers, Onions and Mince Garlic
Add To Meat and Stir
Add Basil and Oregano (Make sure to rub between palms to release oils) I never measure so...
This much of each
Add Tomatoes and Paste
Then add wine to thin to desired thickness. Simmer on the lowest heat (I only use gas stoves) for approx 2 hrs, stirring every 20-30 mins to prevent sticking. After 2 hrs add sugar (this takes the acidity out of the Tomatoes)
As you can see, I only use raw sugar (No GMO's) White sugar is poison- but, if you like cancer... Cook for 1 more hour and- VOILA

It's easy to make... I can do all the prep in about 10 minutes... then it's just stir and wait. You should have seen her face when I showed up without her Sketti!!! When I lived next door, my ex would call me and tell me she won't eat, so I'd say- ask if she wants some of Poppi's sketti. That kid could live on it!
On my next USA-Trip, I'll drop in to have Spaghetti! ;)

Your recipe is simply perfect, dear friend! It's very similar to the recipe I often use (I use the ground beef instead of the sausages and a bit of carots and celery instead of the peppers), but I like so much sausages and so I'll try your Sketti!!! Buon appetito, caro amico ^_^
The sausage gives it more flavor and because the price is about the same, I use it. This is my lazy guy version- I wanted to keep it simple for friends that don't cook much. I usually put celery and sometimes carrots (they do the same thing as sugar). It's starting to get warmer... I look forward to tonight- I can sleep with the windows open!!!
