Pie with pears and custard

Ingredients


  • 100 g of butter;
  • 4 tablespoons of sugar;
  • 240 g of sifted flour;
  • a pinch of salt;
  • 1 egg;
  • 400 ml + 1 tablespoon of milk ;
  • 3 pears;
  • 3 tablespoons brown sugar;
  • 3 tablespoons water;
  • 2 tablespoons of rum;
  • 4 egg yolks;
  • 2 tablespoons of powdered sugar;
  • pinch of vanillin.

Preparation



Rub the oil and 2 tablespoons of sugar. Pour 200 g of flour and salt and mix to make a crumb. Add the egg and a spoonful of milk and knead the dough.

Distribute it on the bottom and sides of the baking dish. The best shape is 24 cm in diameter. Make a few punctures on the dough with a fork and refrigerate for at least 30 minutes.

During this time, prepare the filling. Peel the pears, cut them in half and remove the cores. Put the frying pan on a moderate fire. Pour water into it, pour in brown sugar and wait until it dissolves. Add the rum and mix. Pour into a mixture of pears and fry on both sides for 2-3 minutes.

For the cream, combine the yolks, sugar powder, vanillin and 40 g of flour well. In a saucepan pour 400 ml of milk, add 2 tablespoons of sugar and bring to a boil. Enter the egg mass and cook, stirring constantly, until thick.

Put the cooled cream on the cooled dough and smooth it. Do on the cooled pears longitudinal incisions. Thus, fruits will be better catered, and the pie will look more original.
