My three Ingredients - Teriyaki Chicken, Caramelised Pineapple and Coconut
The chicken breast is cut into strips and and soaked in teriyaki sauce - at least 20 mins. The chicken is most tender the longer it's left soaking, so if you have time to prepare then leave it uncovered in the fridge overnight soaking in the teriyaki. I also spiced the chicken with paprika, basil and black pepper (no salt)
I fried the chicken in a wok on medium to low heat in a little olive oil.
I used a frying pan also on a medium heat and added brown suger to caramelise the pineapple rings.
The combination of the teriyaki and the slow cooking keeps the chicken tender. I added the coconut, it doesn't have a strong flavour so you can use it liberally.
For the final plating, I added a small side of cous cous.

We have an American staying at our airbnb at present and we have had a lot of fun - each taking a turn at cooking and not forgetting to use the opportunity to enter into the competition. Our guest cooked salmon last evening on the barbecue and served it with cous-cous and a kale salad. It was delicious. Hope my meal pleased him as much as his pleased us

The caramelization on those pineapples, nice dish!
These flavors are great together. Salty and sweet from the sauce with the nutty flavor of coconut and some acidity coming from the pineapple. This is a very savory dish! I like your photography work too. The photos really make the dish pop!
